Pumpkin spice & pecan streusel bread


For 1 cake

67g granulated sugar

67g brown sugar

1 tbsp allspice

70g flour

60g pecans, chopped

56g melted unsalted butter

245g flour

5g baking powder

4g baking soda

3g salt

1 tbsp allspice

305g pure pumpkin purée

200g sugar

120g milk

2 eggs

84g coconut oil

4g vanilla extract

  1. Start with the streusel: Mix all the dry ingredients, then add melted butter and combine. Set aside.
  2. Preheat oven at 175 C / 350 F. Line a loaf pan with parchment paper.
  3. Whisk all dry ingredients together. Set aside.
  4. In another bowl mix wet ingredients, then fold them into the dry ingredients.
  5. Pour half of the batter into loaf pan. Sprinkle 3 spoons of streusel on top, then add the rest of the batter into pan.
  6. Top with the remaining streusel and cook for 60 minutes or until a toothpick comes out clean.
